I grind our o...I just discovered soft white wheat. I grind our own and it's equivalent to a whole wheat pastry flour. Still very nutritious and still a whole grain, but even lighter in texture than white whole wheat. What kind of labels do you use? I'm always afraid of them getting ruined when I wash out the containers between bags, so I don't label. But, I recently changed which containers different kinds of flour came in and now I have a container of "mystery flour".
