Dark Chocolate Cherry Muffins



Deliciously chocolaty with a hint of cherry -- yumm-o. Perfect for a sweet morning of breakfast in bed with your honey :)

Chocolate Cherry Muffins - Modified from Kate at Cooking During Stolen Moments

1 3/4 C flour (you can use about 3/4 C whole wheat)
2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/4 tsp. cinnamon
2 T cocoa powder
1/2 C brown sugar, packed
1/2 C dark chocolate chips
1 C cherries (fresh, pitted, cut into 8ths)
1 C milk
1/4 C apple sauce
1 egg white
1 tsp. vanilla

Pit, and cut each cherry into eighths. Place cut cherries in a medium-sized bowl.




In a large bowl, combine all of the dried ingredients.


Stir in chocolate chips.


Add to wet ingredients to the cherry bowl, and stir to combine.


Pour together the wet and dry ingredients and stir until just moistened.




Fill lightly greased muffin tins 1/2 - 1/3 full. In my case, I used 6 jumbo muffins and 1 Corningware dish (small... about 2 C) -- so I'd recommend 24 regular-sized muffins.


Bake at 400, for 18-20 minutes or until muffins are done!






YUM! Next time I might add some zucchini too :)

  1. I can't believe I almost missed these - I've been contemplating what to make with the cherries my son picked out, then decided were too difficult to eat around the pits - this recipe looks perfect!

  4. Cherries and chocolate make a good pairing. Who doesn't like chocolate covered cherries? I like them, anyway. What a great recipe.

    When we made them this weekend, I used frozen cherries - they worked great!

    I've also made them with dried.
