Pepper and Spinach Pizza



I seriously think this is my new favorite pizza. It's delicious -- light and tasty; perfect for a summer day!

Pepper and Spinach Pizza


Crust Recipe - From Amy at The Finer Things in Life

1 T yeast
1 C really warm water (but not too hot that it kills the yeast -- that is, not boiling!)
1 tsp. sugar
1 tsp. salt
2 T olive oil
1.5 C whole wheat flour
1 C white flour


Toppings

1 1/2 C Mozzarella cheese, shredded
1/2 can diced tomatoes, drained
1 C fresh spinach, chopped (or, half of a frozen pkg., cooked)
1 C bell pepper strips (red, yellow, green, your choice)
1/4 tsp. oregano
1/4 tsp. garlic powder
1/8 tsp. pepper
2 T Parmesan cheese

Prepare the crust by mixing warm water, sugar and yeast in a small bowl. Allow yeast mix to sit while you mix the dry ingredients together. Then add oil and salt to the yeast mixture and stir.


Add the wet ingredients to the dry ones, and stir to combine. Knead the dough (about 5 minutes) on a lightly floured surface until firm.



Cover and set dough aside for 5-10 minutes while you prepare the veggies. Setting the dough aside for a few minutes helps make the dough easy to roll out into a pizza.



Sprinkle mozzarella cheese over crust; top with remaining topping ingredients.







Bake about 20 minutes or until crust is light golden brown and cheese begins to brown.

    To answer your question from my blog - I do healthcare software, diagnostic tools. Mostly for radiology departments (CT scans, X-Ray, Mammo, etc.). Most doctor's have several monitors they use for diagnosing, so we try and mimic their environment. I really love my job!

  2. I just made my first ever homemade pizza dough last night and was so pleased with how it turned out! I used Crystal's (Money Saving Mom) recipe, but am going to copy this one to try as well. I like the addition of the olive oil and wheat flour. The pictures of your pizza are gorgeous!

    We love homemade pizza here too, but we need to wait for our oven to be working before we can really bake anything. Last time we made bread it went up in flames (our oven overheats!)
