Menu Plan–December 23

Christmas is almost here!!  We had our Christmas service at church this weekend and I am pumped to celebrate Christ’s birth!  In addition, my husband and I are officially on break. 

My course is all set for January, and my final grades were submitted this past week – so I’m saying hello to nearly 1.5 weeks of movies, books, and games. Anyone else going to see the Hobbit in the coming weeks? 

While we are on break, I’m not planning what to eat for lunches.  It will be YOYO!  And, our menu is here through the end of the year, since next week we’ll be doing the Countdown to 2013.  I do hope you’ll join us!

Here is what we’re going to enjoy over the next two weeks:

Sunday
Blueberry Stuffed French Toast
Cheesy Chicken, Broccoli and Rice {new}

To do: brown meat for soup, make bread

Monday {Christmas Eve!!}
Oatmeal Cookie Pancakes
Crockpot Chicken Chili, French Bread
Peppermint Crunch Ice Cream Cake {new}

To do: Make eggs, prep dry ingredients for scones, wash veggies

Tuesday {Christmas Day!}
Christmas Eggs, Gingerbread Scones, OJ
Cheese platter with fresh fruit & veggies
Crockpot Busy Day Soup & French Bread

To do: Put soup in crockpot (make a double batch)

Wednesday
Leftovers
Pizza Bread, steamed veggies

To do: Nothing

Thursday
Orange Cranberry Muffins
Italian Sausage Tortellini Soup, whole wheat crackers

To do: Prep baked oatmeal

Friday
Apple Cinnamon Baked Oatmeal
Chicken with Peppers, Brown Rice, Steamed Veggies

To do: Thaw wild rice chicken sausages, make wild rice, thaw chicken

Saturday
Chicken Spinach Quiche {use wild rice chicken sausage}
Minnesota Wild Rice Soup

To do: Nothing

Sunday
Leftovers
Crockpot Chicken (new), squash and veggies

To do: prep bagels, make broth

Monday {NYE}
Honey Whole Wheat Bagels and Cream Cheese
Tater Tot Hotdish
NYE Taco Dip

To do: Thaw Italian sausage

Tuesday {2013}
Broiled Grapefruit & Egg Bake
Lazy Sunday Casserole {new}

To do: prep baked oatmeal, dice veggies, prepare Texas caviar

Wednesday
Berries & Crème Baked Oatmeal
Leftovers
New Year Party: Creamy Chicken Dip {new} with Crackers, Texas Caviar with DIY corn chips, Cream Cheese Savory Tartletts {new}, Hot Cocoa, Andes Mint Fudge

To do: Make party treats, thaw pork, make BBQ sauce

Thursday {First day of J-Term}
Leftover Baked Oatmeal
Crockpot BBQ Pulled Pork, mixed veggies

To do: make carrot bread (evening)

Friday
Granola, dried fruit
Mom’s Homemade Chicken Noodle Soup, carrot bread

To do: nothing! 

Saturday
TBD
New Soup Recipe (TBD)

  3. I just recently found your blog because two of the sites I usually read are participating in your Countdown to 2013/Best of 2012. My own meal planning has been much more consistent recently, and I love seeing how other people meal plan, as well as what food they plan. Thanks for sharing! I have to say, I LOVE the idea of including "To do" in your plan, as a way to be ready for the next day. I may incorporate something like that in my own plans. Thanks!
