No-Bake Snickerdoodle Squares

Have you guys been over to see Jessica’s amazing blog – A Kitchen Addiction?  If not, you must go over there and see the incredible recipes and photos.  But, only do so when you have a few hours to browse. 

This recipe comes from Jessica – and is down right tasty.  A no-bake dessert, perfect for summer. 

Jessica says these are granola bars, but my husband and I found them way too sweet and rich for a snack.  No, these are dessert bars, friends.  And, they are delicious.

No-Bake Snickerdoodle Squares – Adapted from Jessica @ A Kitchen Addiction

ingredients

  • 2 1/4 C oats, quick cooking
  • 1 C white whole wheat flour
  • 1 1/2 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1/4 tsp. cream of tarter
  • 3 T butter
  • 2/3 C honey
  • 1 T vanilla

Directions

Melt 3 T butter in a scant 2/3 C honey; either do so on your stovetop, or in a microwave safe container.  If you opt for the microwave, stir after every 30 seconds. 

Meanwhile, combine 2 1/4 C oats, 1 C white whole wheat flour, 1 1/2 tsp. cinnamon, 1/8 tsp. nutmeg, 1/4 tsp. cream of tarter and a pinch of salt in a large bowl.  Stir well.

When the butter mixture is warm, add in 1 T vanilla.  Stir. 

Then, pour the honey mixture over the top of the dry ingredients and stir well, until the ingredients are coated.  I found I needed to add an extra 1/8 C oats at this step. 

Press the oat mixture into an 8x8 glass baking dish that you have lined with parchment paper and lightly greased with olive oil spray. 

Mmmm….

Cover and place in the refrigerator for 1 hour; then slice into squares and serve.  Store any remaining snickerdoodle squares in the fridge for 1 week.
