Ingredient Spotlight: Carrots

Thanks for a great turn out for the Ingredient Spotlight featuring oats last week! We had some great recipes – peanut butter oatmeal snacks, meatloaf muffins, and chocolate oatmeal granola bars are just a few of the yummy recipes shared last week

This week is the carrot!  We’ve grown carrots the last two year, heirloom varieties, and have enjoyed the purple, white, yellow and orange carrot!  Carrots are a tasty & healthy veggie:

  • Vitamin A!  One carrot contains 200% of your daily requirements. 
  • Great source of beta-carotene
  • Low in calories
  • Good source of fiber

We love carrots, especially in soups, or steamed with a little butter and brown sugar.  Some of our other favorite ways to enjoy carrots include:

Roasted in a Summer Veggie Salad

Shredded in Carrot & Zucchini Rice

Baked in Lazy Sunday Casserole

Tucked inside Muffins

Hidden in Sloppy Joe’s

Pureed and Wrapped in Tomato Sauce

Carrots are a great pairing with tomato because they cut the acidity!  We mix carrots into our tomato-based dishes regularly.
