Buttermilk French Toast



For St. Patrick's Day this year, I made Irish Soda Bread.  When we were not able to finish the whole loaf within a day or so of eating it, I tossed it into the freezer.  I wasn't really sure what I was going to do with it yet, but I figured it would keep longer if I froze it.

Good thing I did.

I decided to make it into French Toast!


It was delicious.

Think - buttermilk pancake meets French toast.


Yum.


Buttermilk French Toast - SnoWhite & Frog Prince

1/2 loaf day-old Irish Soda Bread
2 eggs
~1/2 C milk (more or less as you like)
cinnamon and nutmeg, as desired
Raspberries and blueberries
Fresh whipped cream

Mix together the eggs, milk and spices.

Dip each piece of bread into the mixture and cook on a griddle for 5 minutes on each side, or until lightly browned.

Serve topped with fresh berries and whipped cream.
