S’more Roll Ups

It’s fitting, as we covered up our plants last night for the first freeze here, that I post one more summery recipe. 

Okay, so maybe I’m not ready to give up summer cooking yet {we will break out the grill a few more times}, but this recipe will be perfect into the fall too. 

It’s a s’more recipe. 

I’ve avoided s’more recipes all summer long because all the cool kids have been posting s’more recipes left and right and I didn’t want to be part of the crowd.  Plus – s’mores are so sweet on their own, I had no desire to bury them inside a chocolate chip cookie, or smother them on brownies. 

But these. 

These are the perfect balance to the sweetness of the s’more.  The dough is one of my all time favorites and so easy to work with.  If you have a fear of working with yeast – try this dough… you’ll soon be wondering what all the fuss was about!

S’more Roll Ups – Inspired by The Northern Cottage

Ingredients

  • 1 C white whole wheat flour, divided
  • 1/8 C all purpose flour
  • 1 1/8 tsp. yeast
  • 1/2 T sugar
  • 1/8 tsp. salt
  • 1/3 C water
  • 2 T butter
  • 1/2 C dark chocolate chips
  • 1/2 C mini marshmallows

Directions

Begin by melting the 2 T butter in a large saucepan, adding in the 1/3 C water to this mix.  Heat until mixture reaches a temperature of 120 degrees. 

Meanwhile, combine 1 C white whole wheat flour, 1 1/8 tsp. yeast, 1/2 T sugar, and 1/8 tsp. salt in a large bowl.  Stir to mix well. 

Add the warm butter/water mixture to the dry ingredients, stirring well to combine.  Add in the remaining 1/8 C flour.  Knead by hand (or with a mixer) for 5 minutes, until dough is smooth. 

Cover and set aside for 10 minutes. 

Meanwhile, grease a cookie sheet and pre-heat your oven to 350. 

Divide the dough in half.  From each half, roll the dough out like you would roll out a circular pizza crust. 

Using a knife, slice the dough into 6 wedges, roughly the size of a crescent roll wedge. 

In each wedge segment, place 5-6 chocolate chips, and 5-6 mini marshmallows.

Roll up each wedge like a crescent roll and place them onto the greased cookie sheet. 

Repeat with the other half of the dough.  In the end, you should have around 12 roll ups. 

Bake these at 350 for ~10 minutes.  If desired, brush the outside with milk before baking to help brown the rolls. 

They are best served warm… but are good a couple hours later too!  We even had one leftover until the next day, and heated up slightly it was an excellent leftover snack.

  4. These look COMPLETELY DELICIOUS!

    You inspired me to make homemade pizza pockets this week. I used my 5-minute-a-day dough that I keep in the fridge. They were wonderful and my "prepackaged-food in a box loving" husband is now sold on homemade hot pockets. He's ready to put everything from leftover roast/gravy to juicy burgers and cold cuts in them now. Being the sweet lover, I put some nutella in a couple and sprinkled with chocolate sprinkles! My! They were divine! Now, I think I'll add some marshmallows. What a fun idea! You could even crumble a little graham crackers in there for even "Smore!" ;)

    Thanks for continually inspiring me to make yummy things at home. The only downside I see is that its hard to eat out when you COOK THIS GOOD AT HOME! Ha-ha!

  11. Made these last night with our leftover chicken crescent dough and loved them. The marshmallows melted out all over the pan, so next time I'll probably use parchment paper. Of course none of that bothered the kids a bit! Thanks for a fun new recipe!
