Sweet Potato & Black Bean Wraps

These two super foods are a delightful combination.  And, this wrap takes just minutes to prepare. 

It’s a great quick lunch – especially for a Saturday afternoon come fall. 

Sweet Potato & Black Bean Wraps

Ingredients

  • 1 medium sweet potato
  • 1 C black beans
  • 1 medium bell pepper (red, green, … choose your favorite)
  • Tortillas
  • Marble-Jack Cheese

Directions

Peel the sweet potato, and stick it with a fork a few times.  Boil, bake or microwave your sweet potato until soft; then slice into thin strips. 

Meanwhile, dice and sauté your bell pepper in a little olive oil.  Add garlic and onion flakes or powder, if desired.  Toss in the black beans until warm. 

Layer on the tortilla: cheese, bean and pepper mix, sweet potatoes and then season with sea salt. 

Wrap up and enjoy!
