Chicken Spinach Soup

Where has this soup been all my life?! I think, my friends, we have found a real winner. An easy, delicious soup in the crockpot -- took me all of 5 minutes to get dinner ready! That's a winner in my book.

Chicken Spinach Soup - Adapted from Easy to be Gluten Free

1/2 C onion, diced (I used 1 T minced onion)
2 large garlic cloves, minced
2 C chicken broth/stock
1 C water
1/4 tsp. pepper
1 tsp. basil
1 can stewed tomatoes
1 can Great White Northern beans
1 chicken breast
~5 oz. spinach (frozen is fine)

Place all ingredients (including the whole, raw chicken breast) in a crockpot and cook on low for ~8 hours.

About an hour before serving, remove the chicken breast, allow to cool slightly, and then shred using two forks.

Return the meat to the crockpot and continue to cook until ready to serve.

  5. Thought I'd come back by and tell you I made this for dinner tonight. I did it slightly differently since it was too late to put it in the crockpot. I just sauteed my onions & garlic and threw everything in the pot and cooked it on the stove for about an hour. I cooked the chicken seperately and then added it while it was simmering. And I pretty much doubled evertything so I'd have some for tomorrow. OMGoodness...I'm so glad I clicked on your link this morning, because it was SO good! My family really ejoyed it and my 5 year old kept telling me how delicious it was!

    Just a note ;-) I never remove the chicken from the crockpot, I just use my forks and shred it in the crockpot ;-) Less work

  9. Thanks for this yummy recipe! Did everyone just throw the onions and garlic in or did you saute first? I just threw it in and after 6 hours, the onions are still crunchy. I think I tried to be too lazy ;)

    I ended up using dried onion flakes -- thus, they were soft after just a few hours. I might saute the onions first to help them be done to your liking when the rest of the soup is done :)

  11. I love this recipe, I make it often for gatherings and actually just put this in the crock pot for our Christmas dinner. We are the main dish of a progressive dinner and this is super quick and yummy! Every time I make it, it gets rave reviews. I just throw my chopped onions and sliced garlic cloves in the crock pot raw, have never had any complaints. Oh, I also never have chicken stock on hand, so I use chicken or veggie flavored bullion. I know its completely unhealthy but its what I usually have. Thanks for such a great recipe!!!

  15. If you use fresh spinach instead of frozen, should you wait until the last hour to put in the spinach. Or do you think it would be okay for the spinach to cook all day in the crockpot?

    1. Either way. If you leave the fresh spinach in the crockpot all day, it will be very cooked! If you prefer "fresher" spinach in your soup, then I'd add it about an hour or two before serving. Hope that helps.
