For Mother's Day, we had a yummy brunch. One component was these amazingly delicious breakfast potatoes!
They were soooo easy to make, and delightful to the taste buds. We paired them with omelets, stuffed with bell peppers and mushrooms. Yum.
Breakfast Potatoes - Adapted from Crystal's Cozy Kitchen
Serves 6
8 russet potatoes
1-2 T olive oil
1-2 tsp. garlic and herb spices (we used Mrs. Dash)
salt and pepper, to taste
Wash and cube 8 medium potatoes. You don't need to peel them. I did because my father-in-law does not like peels, but when I make them again, I won't peel them!
Toss the cubed potatoes in olive oil.
Then, place potatoes in a lightly greased 9x13 glass baking dish.
Season well with Mrs. Dash garlic and herb spices.
Bake at 350 for 30-40 minutes until potatoes are tender. Stir every 10 minutes.

That's almost exactly how I make mine, except since I'm from the South originally, we call them fried potatoes and eat them for any meal! I make mine on the stovetop and so I probably (okay, I do) use a little more oil than that. I use that same exact Mrs. Dash seasoning, but I don't measure it. I just sprinkle it on until it looks right. I do it a few times during the cooking process while I'm tossing them around and they are cooking. Yours are probably healthier, but I do put mine on paper towels to drain some excess oil when I'm done. Do I get points for that? ;)
ReplyDeleteI'm glad you liked these, I love the adaptations you gave them! I developed the recipe out of desperation - I was craving them and we had moved away from the city into a rural area with no pancake house.
ReplyDeleteI make something pretty similar. That's how amazing potatoes are, you don't need much on them. And skin for me too!!!!!!!!!!!!!!!!
