Turkey Veggie Skillet

A clean-out the fridge/freezer recipe that was tasty enough to make again :)




Turkey Veggie Skillet - SnoWhite
Serves 2-3

1/2 lb. ground turkey, browned
1 T minced onion
~4 C diced veggies (I used broccoli, asparagus, peppers, peas and green beans)
1/4 C Parmesan cheese,

Place the ground turkey in a large skillet.  

Heat until the meat begins to warm (or is browned, if you're browning it "fresh").  I used meat from the freezer, so I just heated the meat.  

Add in the frozen (or fresh) veggies.  Saute until warm and crisp-tender.  



Then, sprinkle the top with Parmesan cheese and allow it to melt.  



Enjoy.



With lots of veggies and lower-in-fat ground turkey (rather than ground beef) and just a sprinkling of Parmesan cheese, this dish is a healthy and quick way to feed your tummy.
