Spinach Squares

This was one of the more tasty and filling dishes we've had in a while.  Kind of quiche-like, but different.

It went together in a pinch, and was excellent paired with some sizzled ham!


Spinach Squares - Adapted from The Local Cook
{Print Recipe}

2 large eggs
1 C milk
1 C 100% white whole wheat flour
1 tsp. baking powder
2 C cheddar cheese, shredded
8 oz. spinach

In a large bowl, mix together the flour and baking powder.

Then, make a well in the center of the flour and crack the eggs.

Add in the milk and mix well.

Next, stir in the spinach.

Then, add in the cheese.

Pour into a greased 9x9 glass baking dish.

Bake at 350 for 40ish minutes, until a knife inserted into the center comes out clean.

  13. I made this tonight and was wondering a few things...

    1. Did you use fresh spinach?
    2. If so, did you chop it up?
    3. We seemed to have more spinach than liquid...and we followed the recipe to a 'T'. Any ideas?

    It still tasted yummy...just curious if we should double the ingredients (but the spinach) next time or use frozen spinach or ???


  14. We had the same problem as Kim mentioned, the liquid wasn't enough to cover the spinach and cheese. We used fresh spinach also. It is still cooking, so I don't know how it turned out, but had to add another egg and some more milk to cover the 4 oz of spinach we used. Please do let me know how to remedy this, it looks delicious!

    Interesting. We've made this numerous times and have not had any issues. Typically we use "fresh spinach" that is truly fresh, or has been frozen.

    8 oz of spinach is about 1 C spinach - 4 oz is about 1/2 C.... how many cups did you add?

  16. It's been about 2 months since I made this, but we followed the recipe...We used about a cup of fresh spinach. The flavor was still really good and we enjoyed the dish - just didn't turn out the way that it looked in your picture. :)

  17. I made this gluten free and it turned out more like a bread. Is that the way it's supposed to be?

    1. With all the flour (or GF flour), yes, it will be more bread/cake like. It's like a soft-biscuit stuffed with cheese & spinach.
