Crockpot Cinnamon Sweet Potatoes with Apples & Cherries

After yesterday's gooey goodness, I figured today I should post a healthy recipe.

 

This one certainly qualifies.  A set of simple ingredients come together, blending flavors in the crockpot all day long, to give you a dish that's sweet enough to pass for dessert, healthy enough to serve for breakfast and unique enough to add alongside a wonderful pork or poultry-based dinner.




Crockpot Cinnamon Sweet Potatoes with Apples & Cherries - Adapted from What Megan's Making

Ingredients
  • 3 medium sweet potatoes
  • 2 large tart apples {we used Haralson}
  • 1/4 C dried cherries {or craisins, or both!}
  • 1/2 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 C apple cider
  • dash of salt

Directions


To begin, wash down the sweet potatoes & peel them.  Then dice the sweet potatoes into cubes; all in all, you should have between 4-5 C cubed sweet potatoes.


Peel the apples, and slice them into large chunks.


Lightly grease the slow cooker and then toss in the apples, sweet potatoes and 1/4 C dried cherries {tart are the best bet here}.

Sprinkle these fruits and veggies with cinnamon, nutmeg, ginger and the dash of salt.  Stir to spread the spices out over the produce.


Then, add in the cider.  Stir until well combined.


Cover and cook the dish on low for about 3 1/2 hours, or until potatoes are tender.  You can also cook it on high for just over 1 hour.  Remove from the crockpot and serve warm.
