Caramel Apple Granola

What started out as a brilliant granola bar recipe idea, ended up as an amazing granola & ice cream topping. 

I’m still working on the granola bars, but in the mean time, if you’re looking for a treat this fall to jazz up ice cream, make this caramel apple granola crunch.

I promise, you’ll love it. 

Caramel Apple Granola Crunch

Ingredients

  • 1 C brown rice cereal
  • 2 C oats (quick or old fashioned, or a combo)
  • 1/2 C dried apple pieces
  • 3 T butter
  • 1/8 C brown sugar
  • pinch of cinnamon
  • 1/4 C caramel sauce

Directions

Begin by combining the 1 C cereal with 2 C oats and 1/2 C dried apples.  Stir to combine. 

In a medium saucepan, melt the 3 T butter and brown sugar.  Add a pinch of cinnamon.  Stir until combined. 

Pour in the caramel sauce. 

Remove from the heat and pour over the dry ingredients.

Stir until coated.

Pour the granola onto a tray with sides, and spread out evenly. 

Bake at 325 for 7 minutes, then remove & stir.  Return to the oven and continue baking for 5-7 additional minutes, or until granola is slightly browned. 

Allow the granola to cool and then break apart into pieces. 

Store in an airtight container. 

Serve with yogurt, frozen yogurt, ice cream or even atop applesauce.
