Menu Plan–October 7

This week marks the half-way point through fall semester… by Wednesday, I’ll have taught more classes than I have left.  Where does the time go?! 

Frog Prince and I took advantage of one last weekend of fall colors and drove to a Johnny Appleseed Festival. Get this -- the Johnny Appleseed Festival had no apples.   

The only apple-related item at the festival was hot apple cider sold by the Girl Scouts.  Frog Prince enjoyed his cup! 

Despite the lack of apples and chilly weather, we had a great time.

Frog Prince was traveling all last week, so things were pretty quiet in the kitchen.  I made this Chicken & Mushroom Brown Rice Bake on Monday, and ate leftovers much of the week. 

We did try two new recipes – a roasted vegetable pumpkin mac & cheese… {yep, it was tasty!}. 

And, Apple Danishes.  A.M.A.Z.I.N.G. 

And, the highlight was celebrating my sister’s 25th birthday with a giant dark chocolate chip pumpkin cookie with dark chocolate frosting!
