Simple Chicken & Veggie Wraps

Need a delicious and nutritious lunch?  Or dinner, for that matter?  I’d recommend these yummy wraps.  To make this lunch even easier, toss an extra chicken breast of two on the grill the next time it’s fired up and save them for these wraps. 

Simple Chicken & Veggie Wraps

Ingredients

  • 1 medium chicken breast, grilled
  • 1 tsp. smokehouse maple seasoning
  • 1 medium bell pepper, red
  • 1 medium bell pepper, yellow
  • 1 small tomato, diced
  • 1 small vidalia (sweet) onion
  • 1 handful of fresh spinach, washed & trimmed
  • 1 tsp. onion flakes
  • 1 garlic clove, minced
  • 4 tortillas, preferably whole wheat
  • 1/4 C shredded colby jack cheese

Directions

Slice the grilled/cooked chicken breast into long, thin strips.  Slice the bell peppers and onion into long, thin strips too. 

Place the bell peppers and onion into a large skillet.  Drizzle with olive oil and cook over medium-high heat until peppers begin to soften.  Add 1 tsp. smokehouse maple seasoning {if you don’t have it, you can omit it, or use your favorite spice}, 1 minced garlic clove, sliced chicken and diced tomato.  Heat until warmed and veggies are done to your liking. 

Then, add in the spinach and heat until wilted. 

Place 1/4 of the mixture in the middle of a tortilla.  Top with 2 T grated colby jack cheese {or your fav cheese will work too!}. 

Roll up and enjoy!
