Crockpot Apple Pumpkin Cake

Frog Prince wanted an apple dessert.
I wanted pumpkin sweet potato.

{you do know, FP is allergic to pumpkin, right? and that sweet potato makes a perfect substitute?}

There was only one dessert to be made. 

So – we combined the two, stuck it in the crockpot and called it dessert.

And, boy, was it good.  Caramel apples on the bottom, pumpkin spice cake – super moist and delicious on the top.  We had success. 

Crockpot Apple Pumpkin Cake – Adapted from Betty Crocker


  • 1 C brown sugar
  • 1/4 C whipping cream
  • 2-3 T butter
  • 4-5 medium apples, peeled & sliced
  • 2 C white whole wheat flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • pinch of ginger
  • 3/4 C packed brown sugar
  • 1 C pumpkin puree (or sweet potato puree)
  • 2 eggs
  • 1/3 C applesauce


Lightly spray the bottom & sides of the crockpot with olive oil cooking spray.  Then, arrange the sliced apples across the bottom of your crockpot.  You’ll want the apples to be about 1 inch thick – so that took 4-5 apples for us.  Our crockpot is the 6 quart size. 

In a small saucepan, melt butter together with the brown sugar and whipping cream.  Heat until butter is fully melted. 

Remove from the heat and pour over the apples in the bottom of the crockpot. 

In a large bowl (or the bowl of your mixer) combine the 2 C white whole wheat flour, 3/4 C packed brown sugar, 2 tsp. baking powder, 1/4 tsp. baking soda, 1 1/2 tsp. cinnamon, 1/2 tsp. nutmeg and a pinch of ginger.  Stir to mix these dry ingredients.

Add to this, 1 C pumpkin or sweet potato puree, 1/3 C applesauce, & 2 eggs. 

Mix well and incorporate into the dry ingredients to for a batter. 

Spread this batter (it will be kind of thick) over the top of the apples & caramel mixture in the bottom of your crockpot. 

Cover and cook on low for 1.75 – 2.25 hours; check after 1.5 hours by inserting a toothpick into the middle of the cake. 

We opted to serve the dessert warm without any ice cream or added whipped cream.  It was wonderful.  Leftovers were equally great, although we did top those with ice cream.

  6. Thank you for this recipe! Combining two favorites in one dessert is awesome! Love that you started with fresh apples instead of canned ones. Nothing wrong with the cans, but it's the apple season, after all. :)

  7. Looks wonderful! Most CP dessert recipes call for a souffle dish to put the dessert in {of which I do not have} so I'm glad to see one I can put straight into the CP liner itself. Will have to try soon!

  11. @ Emily -- I would think pears would work... they seem to cook up nicely, although they might not hold their shape as well as apples.

  15. Made this last night. Love that its a quick couple hours to bake. It was so moist and good. The pumpkin taste got a little lost over the yummy caramel taste, but thats okay. It was YUMMY! Thanks for another healthified recipe!

  16. made this today and the caramel never "caramelized". it stayed liquid, and the apples were loose rather than stuck together/to the cake. is this how it's sposd to be? or should the sauce be sticky with a thickened consistency?
