Blueberry Lemon Oat Bars

These are a new favorite at our house.  The stunning blueberry coloration, hint of lemon and delicious oats made these a smashing hit. 

In fact, we ate them up so quickly, I hardly have any photos of the finished goodness.

So, you’ll have to make them yourself in order to see how good they are!  The recipe originally comes from Cooking Light – so you know you’re starting out with a healthier version.  I swapped the sour cream for Greek Yogurt and used fresh berries rather than dried ones.  We loved the results. 

Blueberry Lemon Oat Bars – Adapted from Nobel Pig


  • 1 C + 2 T white whole wheat flour, divided
  • 1 C oats, quick cooking
  • 1/3 C packed brown sugar
  • 1/8 tsp. salt
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 5 T butter, melted
  • ~ 1 C fresh blueberries
  • 3/4 C Greek Yogurt
  • 1/3 C sugar
  • 1 tsp. vanilla extract
  • 1 tsp. lemon zest
  • 1 egg white, lightly beaten


In a large bowl, combine together 1 C white whole wheat flour, 1 C oats (quick cook), 1/3 C packed (and slightly heaping) brown sugar, 1/8 tsp. salt, 1/4 tsp. baking soda, and 1/4 tsp. cinnamon together.  Stir well. 

Meanwhile, melt 5-6 T butter and then pour the melted butter into the dry ingredients.

Mix until crumbly. 

Lightly grease an 11x7 baking dish, and press all but 1/2 C of the oat mixture into the bottom of the pan. 

In a second bowl, combine 3/4 C Greek Yogurt, 2 T white whole wheat flour, 1/3 C sugar, 1 tsp. vanilla extract, 1 tsp. lemon zest and 1 egg white. 

Mix until well combined. 

Toss in the blueberries. 

Carefully pour the yogurt mixture over the crust layer. 

Then, sprinkle the reserved 1/2 C oat mixture over the top and lightly press the mixture into the yogurt layer. 

Bake at 325 for 35-40 minutes until the edges of the pan are slightly golden brown. 

Cool the bars completely in the pan, but set the pan atop a wire cooling rack to speed up the cooling. 

Slice into bars (n=20), and serve.

    1. Check for one at garage sales this summer! But, you could likely try it in a 9x9 pan -- you might have a little thicker crust, but it could work.

    1. Yes! We made these for Memorial Day -- they were gone so quickly! I was bummed that I didn't get a chance to photograph the cut bars on a plate... oh, well - guess that means I have an excuse to make them again :)

    1. They really are quite healthy - good oats, whole wheat flour, blueberries, Greek Yogurt and just a little touch of butter and sugar! I was so pleased with the Greek yogurt in the center; quite tasty!

  7. I don't have an 11x 17 so do you have any suggestions? Also could I use a whole egg (not just white) or would that mess up the final results? Thanks!

    1. You can likely try making it in a 9x9 baking dish - although I haven't tried that approach yet. My guess would be that you'll have a slightly thicker base and a slightly thicker middle, but that shouldn't be too bad. You might need to cut down on the blueberries though, maybe to 1/2 to 2/3 C rather than a full cup. You can use the whole egg - the color of the filling will have a slightly yellow tint, but it should be fine to use the whole egg.

  10. These look great and I like the lemon with blueberries! I cannot find a link in your post for the recipe without doing a copy and paste thing without all the them but do not want to print I missing it?

    1. Hi Carol,

      In the bottom of every post there is a "print friendly" button. You'll find this after the "You Might Also Like" photos and the Facebook buttons. Then, you'll see a green rounded button that says "print friendly". When you click on that button, you'll have options for what you want to print - photos or no photos, you can even edit out the intro words and just print the recipe. Give that a try and let me know if that still doesn't work for you!
