Three Berry Crisp - Snow White
2 pts. raspberries
2 C halved and pitted cherries
2 C blueberries
2 C oatmeal (quick or old fashioned)
1/4 C butter at room temperature
1 C packed brown sugar, divided
2/3 C whole wheat flour + 2 T flour
2 T cinnamon
Start with freshly washed berries: 2 pts. of raspberries, 2 C halved and pitted cherries, and 2 C blueberries... taste to insure excellency :)
Make the delicious topping, combine oatmeal with room temperature butter, 3/4 C brown sugar, flour and cinnamon.
Begin the mixing process... (and get an arm workout!)
Mix until the topping is crumbly ... again, taste to insure excellence :)
Lightly spray a 9x13 pan with cooking spray, and then spread the berries in the pan. I layered the blueberries and cherries on the bottom and topped with the raspberries.
Then, coat with 2-3 T of flour and stir well. Sprinkle remaining brown sugar (more or less to taste) over the berries. The more you use, the sweeter the final crisp will be. I used about 2 T... and it's good, but tart.
Next, cover up all those berries with the cinnamon-oatmeal topping.
And, bake at 375 for 25-30 minutes. It smelled soooo good after about 10 minutes I had to peak...the berries were bubbling :)
Wait (if you can...it will be a challenge) for the berry crisp to set for about 15-25 minutes before devouring. Remember optimal foraging?
