Crockpot Swiss Steak

Betty Crocker has done it again :) This steak has great flavor, and is unbelievably tender when made in the crockpot! Plus - it's low fat and healthy too.

Crockpot Swiss Steak - Betty Crocker

1 1/2 lbs. boneless beef steak of your choosing
3 T flour {to make GF, use corn starch}
1 tsp. ground mustard
1/2 tsp. salt
2 T olive oil
1 can stewed tomatoes
2 garlic cloves, minced
1 large onion, sliced
1 large green bell pepper, sliced

Cut beef into 6 serving pieces (we often use less meat, just enough for 2, but keep all the veggie proportions as listed above). In a small bowl, combine flour, mustard and salt. Coat the beef in the flour mix.

In a 10-inch skillet, heat oil over medium heat. Cook beef in oil for about 15 minutes, turning once, until brown.

Place beef in a 3.5-6 quart slow cooker. Top with onion and bell pepper.

Mix tomatoes with garlic and pour over the beef and veggies (alternatively, you can used a can of diced tomatoes with onion and garlic). Cover and cook on low for 7-9 hours.

The leftovers make great steak pieces for vegetable beef soup!
