Crockpot Broccoli Beef

My hubby loves broccoli beef, and since he started hanging out with me, he's been deprived. See, most Asian dishes are laden with nuts and sesame... big no, nos, in our house. Frog Prince has graciously given up nuts to hang out with me :) So, I thought I'd try to come up with a recipe that would allow him to enjoy one of his favorite dishes. I'm not sure how it compares to the "real thing", but, it's pretty tasty.

Crockpot Broccoli Beef - Snow White

1 lb. beef, chopped into cubes and trimmed of fat
1/2 C beef broth, low sodium
1/4 C soy sauce
1 T dried, minced onion
1 T brown sugar
2 large garlic cloves, minced
8 oz. mushrooms, canned or fresh (if desired)
1 (16oz) bag of frozen broccoli, thawed
2 T water
1 T cornstarch

Combine broth and soy sauce in a crockpot, add onion, brown sugar and garlic. Stir in beef cubes. Cover and cook on low for 8-10 hours (or on high for 4-6 hours).

About an hour before serving, combine water and cornstarch and blend well.

Stir cornstarch mixture into the crockpot. Add broccoli to the crockpot and cook on low for an additional 30-60 minutes until broccoli is crisp-tender, or done to your liking.

Serve over brown rice, made according to package directions.

Total time:
Cooked on low: 8-10 hours
Cooked on high: 4-6 hours on high, ~1 hour on low = 6-7 hours total

  3. I used beef cut for stew... I usually by a boneless, lower-fat cut and chop it myself, but I found a great sale at Kroger this week on beef already cubed, so I used that.

    When would I put the mushrooms in for this recipe? I may have missed it, but I didn't see in the directions when they should go in.
