Dark Chocolate Raspberry Cake - SnoWhite
6-8 T butter
1 C whole wheat flour
1 C flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 C milk
1 tsp. vanilla
1 1/4 C brown sugar, packed
~4 C raspberries (we used fresh - washed, and patted dry)
~1 C Dark Chocolate Chips (we used Hershey's Special Dark)
Preheat oven to 350. Place butter in a 9x13 pan and melt in the preheating oven.
While butter melts, mix together flours, baking powder, salt, milk, vanilla and brown sugar.
Pour roughly half of the dough into the 9x13 pan that contains the melted butter.
Top with 3 C raspberries.
And, sprinkle in chocolates.
Top with remaining dough by plopping the dough over the top. Then, sprinkle additional 1 C raspberries over the top of the dough.
Bake at 350 for 30-35 minutes, until center is set. [you may need to decrease the oven temp to prevent edges from burning -- baking longer at a lower temp]
Yum.

ReplyDeleteHoly cow - can that first pic of raspberries and choc. chips be any more beautiful. :) YUM!! We have rasb bushes and my first crop got killed by a light frost the one night we were gone. I was SO sad, but hopefully we'll have more because they are my favorite.
