Potato Fries
These are tasty little things... and if you cut them thin enough, they almost become your own homemade potato chips!!
Potato Fries - Snow White
2-3 large potatoes (I used red potatoes), peeled and sliced into thin wedges
1 T olive oil (or enough to coat the potatoes)
~1 tsp. salt
Put cut potato wedges into a bowl and sprinkle with salt. Drizzle olive oil over potatoes and toss to coat.
Place potatoes on a greased cookie sheet (I used tinfoil for easy clean up), and spread them out so they are not overlapping.
Cook at 425 for 20-30 minutes; check half way and flip over.
Cook until desired doneness is reached. If you like them crispy, they'll take longer. Sprinkle with additional salt, if desired, when you remove them from the oven.
We gobbled them up pretty quickly. I made these and sweet potato fries together and this perfectly fed 4 adults. Thus, this recipe (2-3 large potatoes) should feed 2 adults.

ReplyDeleteYummy! We dip in EVOO. Then throw in a bag with salt, paprika and grated Parmesan before baking. It turns out wonderful!
