Parmesan Italian Fococcia

Lucy posted a great recipe earlier this week, and she said it would make a great panini bread (which was what I was looking for), and it sure did!

I made a half recipe, since we like our bread extra fresh, and it was perfect for the two of us.

Parmesan Italian Fococcia - From Lucy's Kitchen

1/2 + 1/6 C warm water
1/2 tsp. salt
1/2 tsp. sugar
1 C bread flour
1/2 + 1/3 whole wheat flour (make that 1/3 C generous)
1/2 tsp. Italian seasoning
1/2 T Parmesan cheese, grated
1/8 tsp. garlic
1 1/4 tsp. yeast

Combine ingredients in your bread machine according to manufacturers directions.



Set to the dough cycle and let the machine do the work.

When done, remove from the bread machine and allow dough to sit for 10 minutes, covered. Then, shape into a long loaf and press dimples into the bread.

Cover, and let rise for 30 minutes. Re-press the dimples and then bake in a 350 degree oven for 20-30 minutes, until bread is lightly browned.
