Crockpot Apple Cake

I'm just beginning to explore the wonderful world of baked goods make in the crockpot! Sure, I've tried my hand at a few cobblers and had some success, but I've never tried making a cake!! This cake was awesome -- moist, fully cooked, and full of the flavors I love so much about fall. We started the dessert, ran out to get the new David Crowder Church Music CD, went for a quick walk, and came back to enjoy a tasty treat!

Crockpot Apple Cake - Modified from Fix-It and Forget-It

1 C flour (1/2 C wheat, 1/2 C white)
3/4 C brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
3 large apples, chopped
2 eggs, beaten
2 tsp. vanilla

In a medium bowl, mix together flour, sugar, baking powder, cinnamon and salt.

Peel and slice your apples (I diced mine fairly small), and then coat with the flour mixture.

Mix the eggs and vanilla in a small bowl.

Pour the egg mixture over the floured apples. Pour/spoon into a greased crockpot.

Yes, the batter is thick.

Cover, and cook on high for ~2 hours.

Cake is done when a toothpick inserted in the center comes out clean.

Slice and serve warm. Leftovers were great for breakfast too ;) And, since it's fat-free, I didn't feel too bad about eating cake for breakfast!

Here's Frog Prince enjoying it as we listed to David Crowder's new CD - Church Music.

I think that if David Crowder would have been joining us, he would have liked it too.

WOW!!! now you can make everything. I think this is GREAT!!! Thanks for the YUMMY!!! recipe for Apple Cake. Now I need to send my husband to the store for more apples. Geri

  10. This seems like an awesome use for my crockpot! That cake looks so moist, especially for having no fat in it. Heck it looks moister than most cakes that have over a cup of oil in them. I am SO making this! Thanks for the recipe. I can't wait to see some of the other recipes on your menu plan for this upcoming week.

  26. Hey friend!
How many people would you say this would serve?
I want to make it for 6 people for this Saturday night and I'm so excited about it. It looks so delicious!

  27. I was wondering what size crockpot is used for this recipe? Does it matter? I have a smallish 2 qt crockpot.

  28. I just made this cake this weekend and it turned out fabulous! My two toddlers loved it, too. Thanks for the great recipe and I love your site!

  29. It looks really, really good, and I'm inclined to try it regardless, but one question: How's it fat free with two eggs in it? Is it just really low fat with two eggs being the only contributing fat?

  30. Hi Michelle~

Great catch -- I was thinking about no additional fats through oil/butter in this recipe. But, you are right, there is fat in the recipe and it's from the eggs. Thanks!

  31. I LOVE using my crock pot but have never made a dessert before. I never thought about it until reading this post. Now my crock pot will be in use way more than it already does.

I'm thinking banana nut bread in the crock pot now....

  32. What are your thoughts on shredding the apples instead of chopping them?

    ReplyDelete
  33. @ M --

You can totally shred the apples for this recipe -- I'm just usually too lazy to do so. I like the apple chunks too, but I'm sure shredded apples would work wonderfully.

  34. This looks amazing! It is on my to-try list now.

    Thanks for sharing.

  35. Since there are so many different sizes of crockpots now, what size is best for cooking this in? 2qt? 5qt?

    Thanks.

  36. Hi Snow White,

for the first time today, I baked with my crockpot using your Apple cake recipe and I love it!!!! I added cubed cheddar cheese to it and the result is so yummy!!! However, the sides of the cake was very done, almost to the extent of getting burnt while the top of the cake was still a little mushy and wet after 2 hours on high... what should i adjust?

    ReplyDelete
  37. ok first i tried this and mine came out burnt as well and unevenly cooked. I think most things need to cook slow in a crock pot and I don't believe in cooking on high, there are also different crock pots out there but if you cook on low you don't usually have a problem. I will try it again but don't recommend cooking on high

    1. How fast it cooks is entirely dependent on how your crockpot cooks. I've made this a number of times, and have a preferred crockpot in which to make this recipe. I hope it turns out well for you on low!
