Granola Bar Bites
A few weeks ago I got the new "Cookies for Everyone" book from the library. In it, I found a couple yummy-looking recipes for granola bars, something those of us with allergies often can no longer buy in the store. So, I tried my hand at one of their recipes, and it's quite tasty.
We love taking homemade granola bars for lunch - they are filling and we know what's in them!!!
Granola Bar Bites - Modified from Cookies for Everyone Cookbook
2 T oil
2 T brown sugar
2 T honey
2 T flax*
2 T water
1 tsp. cinnamon
1 tsp. vanilla
1 3/4 C granola
1 C Enjoy Life Trail Mix (or more granola + dried fruit)
1 ripe banana, sliced (about 1/2 C puree)*
1/2 C rice flour*
2 T tapioca flour*
Cream together oil, brown sugar, honey, flax, water, banana and vanilla.
Mix in flour and cinnamon.
Stir in granola and trail mix.
Then, spoon into a greased 9x9 inch glass baking dish, or into mini-muffin tins.
Bake at 350 for 30 minutes.
Cool and cut into small bars.
*I used apples in place of the bananas, and used whole wheat flour, just 1/2 C, for the flax, and flours.

ReplyDeleteI needed something I could give to my children as a quick breakfast and these really perfect for that.
My youngest daughter is gluten and lactose intolerant and my son is allergic to eggs....It's so good to be able to make something all my children can eat and enjoy.
