Penne with Spinach and Chicken

Cheesy. Yummy. Goodness.

And, it goes together in a pinch. You can even make it ahead of time and keep it in the fridge until you're ready to bake it.

Penne with Spinach and Chicken - Adapted from Ashley at The Happy Little Home

1 box (1 lb) whole wheat pasta of your choosing (we used penne)
2 boxes, frozen spinach, thawed and drained
1 lb. chicken breast, shredded
2 eggs
1/4 C minced onion
2 cloves garlic, minced
1/2 C Parmesan cheese, shredded
1 C mozzarella cheese, shredded
~1 C spaghetti sauce

Cook pasta according to package directions. Dump into a greased 9x13 glass baking dish.

Then, preheat the oven to 375.

Meanwhile combine spinach, onion, eggs and 1/4 C of each of the cheeses in a bowl. Mix well.

Add in chicken and stir well.

Then, stir the pasta and cheesy chicken spinach mix together in the glass baking pan. Top with additional cheeses.

Cover your dish and bake for ~ 30 minutes.

Then, remove the tinfoil and bake for an additional 10-15 minutes, until cheese on the top is browned.

Serve warm, with your favorite spaghetti sauce!

The original recipe used white pasta and more cheese... I always find that putting the cheese on the top where you really want the flavor allows me to cut down on the cheese! And, we really like whole wheat pasta too.

  12. Oh yum - I bet it's delicious even without the sauce added!

  13. How much spinach does 2 boxes of frozen yield? I'm asking because I prefer to us fresh and I don't know how much to 2 cups maybe, do you think? This looks so good!

  14. Klutzymama,

I'd estimate that 2 boxes of frozen spinach yields about 2 C cooked spinach. I think using 2ish C fresh should be fine.

  15. Okay thanks. I made this tonight and we all loved it. I had to substitute italian sausage for the chicken because I didn't have any, but it was so good. I think it will be even better next time when I make it with chicken. We also had your breadsticks with it and they were a big hit too. I just love your blog!

  16. This was yummy! I made it last night. I have a question though. When ever I put already cooked pasta into the oven to bake I get pieces that are hard. What am I doing wrong?

    I love your blog!

Thanks for stopping by! I'd love to hear from you; especially how you're finding JOY in your kitchen.
