My husband love cherries.
They are his favorite.
So, for Valentine's Day, I decided to make him a cake.
Sweetheart Cherry Cake - Adapted from Tidy Mom
1 pkg. yellow cake mix
1 egg
1 tsp. baking powder
1 tsp. vanilla
~3 C homemade cherry pie filling
fresh whipped cream
dark chocolate chips, to taste
Mix together the cake mix, egg, baking powder, vanilla and 1 C of the cherry pie filling. Make sure that the pie filling is cool, if you make it yourself.
The batter will be really, really thick. Take my advice, don't use a whisk.
Then, fold in am additional 1 1/2 C of the cherry pie filling.
Spread cake into two greased 8-inch round pans.
Bake at 325 for 30-45 minutes, until a toothpick comes out clean.
Cool in the pans for about 5 minutes, then flip onto a cooling rack to cool completely.
Meanwhile, whip up some fresh whipping cream topping.
Spread the remaining 1/2 C cherry pie filling onto the bottom layer of the cake.
Top with the second layer, and slice.
Drop whipped cream onto the cake slices and
Top with dark chocolate chips...
maybe in the shape of a heart?
Serve to one happy spouse.

Yum! That looks good. It's very similar to my favorite cake, except I use a dark fudge mix instead of white cake mix.

I was thinking of making this on Sunday, but don't have homemade pie filling. Could I use 3 cups of store-bought pie filling instead??
