Granola Bars {redux}

I've been on this quest to find nut-free granola bars, and, let me tell you -- it's hard!



Thus, I started to make our own granola bars -- right now, this is our favorite version, so I thought I'd share it with you.


Dark Chocolate Cherry Granola Bars - SnoWhite

3ish C oats
2 C Rice Krispies
1 can sweetened condensed milk
1/2 C dark chocolate chips
1/2 C dried cherries, chopped

In a large bowl, combine oats, Rice Krispies, chocolate chips, and cherries.


Add the sweetened condensed milk.


Stir to combine.


Pour into a greased 9x13 glass baking dish and, using a spatula press gently pack the bars down a bit.


Bake at 350 for ~22 minutes (a little longer if you want harder granola bars).


Cool, and then slice into bars.


Store in an airtight container for 1 week, or in the fridge 1 week longer.

  2. They look great. Have you ever tried making your own sweeten condensed milk? I've started doing that (as well as evaporated milk) because then I don't have to think ahead about making sure I have the cans in my cupboard - I always have the stuff on hand to make it.

  4. They look delicious. I wish though, that there was another way to make them without using condensed milk. That stuff makes my thighs swell just looking at it. Maybe honey? Or even light maple syrup? I know... but condensed milk is yummy.

    I've tried honey (Crunchy Honey Granola Bars - on sidebar) and also corn syrup, but so far, these are my favorite. I did use fat-free sweetened condensed milk and they turned out great.

    Many people use peanut butter as the binding agent, but I can't do that with my allergies.

  7. Ohhh, I will have to try these! Rachel and I just made your crunchy honey ones a couple days ago. Rachel didn't like the taste of honey, but all the other kids (and me) loved them!

  8. What kind of Rice Crispies do you use? I have not been able to find any without preservatives. (I have been trying to stay away from them for the most part . ..)

  10. Just printed off the recipe and super excited to try them with the kids!
    We'll might change them up a bit because my little guy doesn't like chocolate- I KNOW, CRAZY!!!
    Anyways, although we are lucky enough to have peanut-free granola bars up here, I think these would be alot cheaper and probably more tasty too!

  11. Yum! I make Chewy Granola Bars using honey. I might have to try these next time sweetened condensed milk goes on sale! What a great binder!

  12. I am allergic to nuts of all kinds and this is a definite try as I have a hard time finding any on the market or even recipes for homemade use that do not contain nuts in some form or fashion. Thank you.

  17. My husband and I just polished off our first batch of these (I used raisins instead of cherries) in less than a week. I'm planning to make more tomorrow, and will be instituting a one bar, per person, per day ration. Hubs has a nut allergy as well, and I'm picky about my granola bars, so I usually by two different kinds; now, I can make my own! I can't wait to try different fruits and things in this recipe!
