Berry Baked Oatmeal
One of our favorite breakfasts around here is Baked Oatmeal.
After seeing Stacy's version of berry baked oatmeal, I decided to throw some berries into our version of baked oatmeal. We greatly enjoyed a yummy, filling breakfast.
Yes... that is a dirty plate. What can I say -- it was so good I had a second piece after church ;-)
Berry Baked Oatmeal - Finding Joy in My Kitchen
{Print Recipe}
1/2 C applesauce
1/2 C brown sugar {or 1/3 C honey}
1 egg
3 C oats (quick-cooking)
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 C milk
1 tsp. vanilla
3/4 C frozen berries (or fresh)
Combine the dry ingredients together in a bowl and stir well.
Add in the milk, vanilla, egg and applesauce.
Stir until moistened.
Then, gently stir in the berries.
Pour into a lightly greased 8x8 inch glass baking dish.
Bake at 350 for 40ish minutes, until center is set.
Serve warm.

This looks so yummy!! I will have to try this sometime--hubby and I both love oatmeal, but I've never thought to bake it. Thanks for sharing :)

ReplyDeleteOne of my first ventures with the toaster oven was making brownies. Didn't work so well. Charred on top and gooey in the middle.

ReplyDeleteI ended up cooking it just a little longer than I did in the oven, and cooked it on the very bottom rack of the toaster oven. I watched it pretty closely because I wasn't sure how it was going to turn out.
This look so good! I can't wait to try it. Hoping my kids enjoy it too for a nice healthy breakfast.

ReplyDeleteI have this in my toaster oven baking now. Can't wait to try it! I only had strawberries and some kind of berry applesauce, but thought it should work out well.
ReplyDeleteWe recently bought a new, larger toaster oven with convection and I'm loving it! I can bake without heating up the house as much as a reg. oven does!
I just tried this for the first time tonight, and it's DELICIOUS! I used fresh blueberries. Thanks for the great recipe!

ReplyDeleteI made your baked oatmeal last Saturday and it was WONDERFUL! My son loved it, I thought he would, but more impressive was my husband ate most of the pan. That's HUGE because he won't touch oatmeal.

Had this with our breakfast for dinner meal tonight. It was sooo good. My husband loves oatmeal, but me...not so much! I however, loved this. I'm so glad we have leftovers for breakfast tomorrow!

ReplyDeleteCan you use regular oatmeal for this recipe? We buy in bulk and I only keep regular (not quick cooking) oatmeal on hand.

ReplyDeleteYes, I've used old fashioned "regular" oats in this recipe - just extend the cooking time a little longer. The old fashioned oats are slower in cooking.
