When I lived in the woods for two summers, we had fabulous cooks making delicious meals! One of my favorite breakfasts was baked oatmeal. I had never had it before living in the woods, and it forever brings back all those memories -- just by its fragrant smell :)
Au Sable's Baked Oatmeal
1/2 C applesauce
3/4 C sugars (brown and white mixed)
2 eggs (may use egg whites)
3 C quick-cook oats
2 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1 C milk
1 tsp. vanilla
Mix together all dry ingredients. The more brown sugar you use, the less white sugar you need, and the less sugar you actually need to use. I usually do a heaping 1/2 C brown sugar plus a dash or so of white.
Stir to combine, and then store in an airtight container until morning (you can mix it up in the morning, but I find it easier to get the dry ingredients ready the night before).
In the morning, mix together eggs (lightly beaten), applesauce and vanilla. I use 1 egg, and homemade applesauce which has a few chunks of apples in it. Puree your applesauce first if you don't like the apple pieces.
Then add the milk and stir to combine.
Add in wet ingredients to the dry ones and stir until moist.
Pour the mixture into a greased 8x8 or 9x9 pan and sprinkle the top with cinnamon, if you wish.
Bake at 350 for 30-40 minutes, or until golden brown.
Serve warm with yogurt -- we love vanilla with fresh fruit, or cherry vanilla. The leftovers warm up nicely in the microwave.
The breakfast also freezes really well; it's great to have it in the freezer for a quick morning meal.

I had to stop in the middle of eating my first few bites to leave you a note! : ) I've never even heard of baked oatmeal... but boy am I glad I have now not only heard of it, but baked it, eaten it, and loved it! : ) I am a huge fan of all things oatmeal - cookies, muffins, etc. My mom occasionally makes the most wonderful cinnamon oatmeal muffins for us in the mornings. I just know she'll love this recipe! It's so filling! Thanks again for sharing!
ReplyDeleteThis is very tasty and something different for breakfast--I get tired of the "wet" oatmeal that is just boiled:)) This was like eating moist oatmeal cookies, except healthy:)) In fact, you know how there are those "breakfast cookies" you can buy--well, I bet this is better and it isn't even time-consuming! ReplyDeleteI make your baked oatmeal all the time and came across one that used pumpkin in it that linked back to your blog... however I can't seem to locate it again. Do you happen to know who it was or have ever tried it? I've wanted to try something new and thought I would give that a try.

ReplyDeleteI bake it and then freeze it. I'll often freeze it in serving sizes just right for us. Take one out, microwave it for a minute or 2 and my husband and I have a hot breakfast.
