In January, my sister traveled to Uganda. She spent the month there and during her stay she had a chance to work as a nurse at local hospitals as well as stay with a family!
When we were visiting her for her college graduation a couple of months ago, she decided to make us a traditional Ugandan dinner!
I asked her if she'd be willing to share her recipes with you all, because they were delicious and part of a cooking world that is unfamiliar to me. Now that she's a registered nurse and is all done studying and taking her board exam, she's put together a couple of posts for you.
So... I'd like to introduce you to my sister (she's turning into quite the little cook herself) -- she'll be providing the Ugandan Dinner recipes below:
This is a traditional Ugandan flatbread eaten with most meals. It's used like a bread, but can also be eaten as a dessert with a little bit of butter and sugar. It's a great recipe to experiment with!
2 C flour
1/2 tsp. salt
1/2 C whole wheat flour
1 C water
Mix the flours, salt and water together until the dough is elasticky. Add more water if the dough is too firm, or more flour if it's too sticky. Knead the dough with your hands for about 10 minutes. Divide the dough into 8 equal portions
Roll each portion into a small flat circle, about 2 inches in diameter.
Then, brush some melted butter over the top of the dough circle, and roll them up into a tube.
Then, roll them into a "roll" by bringing the ends in to form a swirl.
Allow the "rolls" to sit, covered, for about 20 minutes.
After resting, roll each piece out into a very think circle, as thin as you possibly can make them.
Brush a little melted butter on both sides of the dough and place it in a warm pan.
Using your hand or a fork, keep the dough moving in a circular motion until the bottom begins to brown (about 1 minute).
Flip and repeat the process on the other side.
Serve warm with your meal, or warm with cinnamon and sugar for dessert!
