Rainy Saturday Oatmeal Cookies
because every rainy Saturday needs an oatmeal cookie.
Oatmeal Cookies - Adapted from Quaker Oats
{Makes 4 dozen cookies}
1 stick butter, softened
1/2 C applesauce
3/4 C brown sugar
1/4 C granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 C wheat flour {white or red}
1 tsp. baking soda
1 tsp. cinnamon
dash of salt
3 1/2 C oats {quick or old fashioned}
Beat together the butter, applesauce and sugars until smooth and creamy. Add in the eggs and vanilla. Mix well.
Then, combine the flour baking soda, cinnamon and salt together in a medium bowl. Stir well. Add this mixture to the creamy goodness shaping up in the bowl.
Stir in the oats.
Drop by the tablespoon onto a lightly greased cookie sheet.
Bake at 350 for 10-14 minutes, until lightly browned and just about set in the center.
Cool the cookies on the baking sheet for 1 minute; then remove to a cooling rack to cool completely.
Enjoy!

Rainy days = baking to me too because that's what we always did as kids. I have something for you over on my blog :)

ReplyDeleteCan these be frozen? 4 dozen is a lot of cookies for us but if I could freeze them then that would be super.

ReplyDeleteYes, Lisa - freeze away! While you can freeze them after baking, my favorite way to freeze cookies is pre-cooking. Drop the dough balls onto a cookie sheet and freeze for 20ish minutes; then remove from the tray and store in the freezer in an airtight container or ziplok bag. Then, when you want a half-dozen or so fresh, go right ahead and make them. Bake as you normally would, with just a little longer time, as needed.
