Simply spray the cheese grater with cooking spray before grating! The "grease" makes the cheese glide easily across the grates with less effort. This is key for mozzarella and other softer cheeses.
I freeze most of my cheese, so when I grate it it just sorta crumbles.....and that's easy. :-) But I have a tendency to grate my fingers so I have to wear an Ove Glove when I shred anything. Cooking hazard. ;-)

I always freeze mozzarella cheese, it just crumbles when defrosted, perfect for pizza :o)
