These delightful “fries” make a great afternoon snack or pairing with a grilled dinner.
Have you ever tried green bean fries?
Green Bean Fries – Finding Joy in My Kitchen
Ingredients
- Green beans
- Olive Oil
- Sea Salt
- Garlic powder, if desired
Directions
Toss washed (and thawed, if using frozen) green beans with olive oil.
Spread the green beans on to a cookie sheet lined with parchment paper.
Season as desired.
Bake at 300 degrees for 30ish minutes; flipping beans every 10 minutes. In the last 5-6 minutes of baking, turn up the oven to 375 or 400 – but watch the beans carefully as they will burn!
Serve warm.
I would imagine leftovers keep in the fridge, but won’t reheat in the microwave nicely. We polished off an entire tray, just the two of us, so if you end up with leftovers – let me know!

Maybe slice squash and carrots on an angle to make them more chip/plank shaped?

ReplyDeleteThey are not all crunchy, but some are slightly. I would think coating them in bread crumbs or cornstarch would increase the crunchiness. They aren't soggy, though.
DeleteWe love to roast asparagus and brussels sprouts in olive oil and kosher salt. The kids fight over them.

These look and sound wonderful! I sometimes sauté green beans with the above ingredients. Does your method make them crunchy? We also like carrot fries and sweet potato fries.
ReplyDeleteNot overly crunchy - but more so than sauteing. They aren't very flimsy when done, they are fairly dried - so they have a little crunch.
DeleteRutabaga fries! Peel and slice, then toss with a bit of olive oil + salt/seasoning, and roast at 425 for 15-20 minutes (depending on how thick you cut them)
