Pizza Dip

You still have 30 minutes before the tip off for tonight’s National Championship game...and I’m guessing you have most of the ingredients to make this dip.  You’ll want to make it because it tastes like you are eating the toppings right off the pizza. 

I think it has just the right amount of cheese & tomato, and it’s so chocked full of veggies it has to be good, right?

Although my teams were eliminated in the sweet 16 and elite 8, we still plan to enjoy some of this delicious pizza dip during the game tonight. 

Pizza Dip – Inspired by Macaroni & Cheesecake & Pocket Change Gourmet

Ingredients

  • 4 oz. cream cheese
  • 1 C tomato sauce
  • 1 tsp. Italian seasoning
  • 1/2 medium green bell pepper, diced
  • 1/2 medium red bell pepper, diced
  • 4 oz. mushrooms, sliced
  • 2 C fresh spinach
  • 2 tsp. minced onion
  • 1 tsp. minced garlic
  • 15 turkey pepperonis, quartered
  • 1/2 C Mozzarella cheese
  • 1/2 C Cheddar or Colby Jack Cheese

Directions

Begin by dicing up your veggies.  Add in veggies you enjoy – tomatoes or olives would add in nicely.  Sauté these veggies until crisp-tender. 

Then, add in 1 tsp. Italian seasoning and quartered pepperoni. 

Next, add in 2 C fresh spinach.  Heat until spinach is wilted, then add tomato sauce & paste. 

Finally, add in 4 oz cream cheese and heat until warmed and bubbly. 

Add in 1/2 C cheese – a mixture of both. 

Transfer the mixture into an oven-proof dish.  Bake at 350 for 15-20 minutes until bubbly and cheese in melted. 

Serve warm with whole grain tortilla chips or breadsticks.   

Refrigerate any leftovers and reheat as needed.

  4. This looks fantastic! It's just like pizza, but you save a few calories on the bread... which just means you can eat more of this haha (that's how it works right? ;) )
