Mini Blueberry Crisps

As a little treat, I made two mini blueberry crisps. 

They were so good… I should have made more!

Mini Blueberry Crisps

Ingredients

  • 1 C blueberries, fresh or frozen
  • 1 tsp. corn starch
  • splash lemon juice
  • 2 T white whole wheat flour
  • 3 T oats, quick or old fashioned
  • 3 tsp. brown sugar
  • sprinkle of cinnamon
  • 1/2 T butter, softened

Directions

Toss the blueberries with corn starch.  Add a splash of lemon juice. 

Split the blueberries into two small lightly greased ramekins. 

Combine 2 T flour, 3 T oats and 3 tsp. brown sugar in a small bowl.  Add a sprinkle of cinnamon.  Mix in 1/2 T butter. 

Divide the topping evenly over the top of the two ramekins. 

Bake in a toaster oven, or oven, at 375 for 20 minutes.  It’s useful to place the dishes on a cookie sheet incase they bubble over. 

Serve warm – with ice cream of whipped cream for a real treat!
