Cheesy Crackers

Transitions are a challenging thing.

Often, you crave what things used to be like.  

You wonder how God has this new thing planned out.  

Will you like it?
Will it work?  
What will this new thing look like?  
How will it compare to what was?  

As we've begun settling in at our new place and for me, in a new job, I've asked myself these questions.

Truth is, I don't know what this semester is going to look like.  
I don't know how things will work -- balancing academic life, home life and blog life.  
I don't know how this new life will compare with my life as a grad student.  

It's kind of like when I tried making homemade cheese-its.  

We love the original.  But, we don't like what's in them.  
I tried a recipe a while back, and they were just "okay".  
We missed what was.  

So, we consumed the original with less frequency, but didn't venture into something new.  

Recently, I decided to try again.  
I didn't know what the final product would look like. 
I didn't know if it would work. 
I didn't know whether or not we'd like it.
I didn't know how it compared to what we loved.  

And, I'm glad we tried it, because these cheesy crackers are delicious.  

They don't quite taste like the sunshine cracker in the bright red box, but they are good.  
They look a little different.
They went together pretty nicely.
And, they fix our craving for those cheesy little crisps.  

I hope you try them -- knowing they won't quite taste like the original, but, the transition to healthier, less processed eating, might just be a little easier with these crackers.  

And, my transition to being a professor, home owner, growing wife and developing blogger might just be a little easier with some comfort food :)

Whole Wheat Cheesy Crackers - Finding Joy in My Kitchen

1 1/2 C whole wheat flour
1/2 C white wheat flour
1/2 tsp. salt
2 T olive oil
2/3 C water
1 C extra sharp cheddar cheese, grated and at room temperature
sea salt {for garnish}   

Combine the dry ingredients in a large bowl {or in the bowl of your mixer}.

Add in the water and olive oil.

Then, add in the cheese, making sure it's close to room temperature.

Knead the dough for a few minutes {I used my mixer for 5ish minutes} until the dough is smooth and well mixed.

Roll the dough onto a cookie sheet {I used two cookie sheets} as thin as you can... around 1/8th inch thick.

Use a pizza cutter to cut the dough into crackers about 1 inch by 1 inch.  Then, prick each crackers with a fork.  Sprinkle with sea salt as desired.  

Bake at 375 for 15-20 minutes, until crackers are lightly browned.  Watch crackers carefully, as they will burn relatively quickly, especially as they approach the end of their baking time.

Crackers will pop right off the tray with very little effort when cooked properly.

  4. This post describes pretty accurrately what I am currently feeling. So I'm thinking this recipe is a must try. Would love a gluten-free version, but those are kinda hard to come by in a cracker.

This may be a stupid question, but when you say "white wheat flour" is that the whole wheat white flour or regular white flour? Thanks for all your wonderful recipes.     White wheat flour is a special blend of whole wheat flour. Normally, whole wheat flour is made from red wheat berries, making whole wheat flour that darker "wheat" color. White whole wheat flour is made from white wheat berries, making it lighter in color.

    What I love about white wheat is that it has the nutritional value of regular whole wheat, but acts and looks much more like all purpose flour. In fact, I don't buy all purpose flour any more -- I use white wheat in it's place.

    The only place I've found in my area that makes white wheat is King Arthur -- hope you check it out!

  15. Great recipe...thanks for sharing! Besides not wanting the artificial stuff, I have an onion/garlic allergy so even shopping for crackers can be exhausting. I will definitely give these a try soon - and will use my set of square cutters I just got from King Arthur! Lisa
