Spring break is here! I am very much looking forward to a week of rest, especially after last week. By Friday afternoon, after writing three conference abstracts and re-submitting a manuscript for publication, I was ready for the weekend.
We had some fun celebrating my mom’s birthday with a trip to the zoo, followed by pizza, dessert and Thor #2.
Then, we rounded out the weekend with a hike at my favorite nature center with some friends and celebrated a B1G 10 Tournament title in Men’s Basketball! Go Spartans!
Our menu highlight of the week goes to a new recipe – Deep Dish Sloppy Joe Casserole (recipe coming soon). On to spring break!
Sunday
Chicken Cheddar and Rice Soup
Healthy Soft Oatmeal Cherry Cookies
To do: Thaw chicken and chicken broth, make cookies
Monday
Irish Soda Bread & Very Green Soup
Un-Stuffed Cabbage Roll Casserole
Mint Ice Cream
To do: Thaw ground beef/turkey mixture, make ice cream (AM)
Tuesday
Soda Bread French Toast, Berry Sauce
Balsamic Glazed Chicken with Roasted Potatoes {new}
To do: Thaw chicken (AM)
Wednesday
Sweet Potato Risotto, steamed veggies
To do: Thaw Italian sausage, make cheesecake for Mom’s B-day
Thursday – Mom’s Birthday!
Leftovers + no-bake mixed berry cheesecake
Friday
Turkey, Bean & Spinach Soup {new}
To do: Thaw ham for Saturday
