Taco Soup


This recipe was given to me by a dear friend; she made it for Frog Prince and I when we came over for dinner. It's one of our favorite quick and easy dinners. We take it often for potlucks and get-togethers! I love that you just dump and let the crock pot cook away :)

Taco Soup -From Bird at The Knot and Knest

1 envelope dry taco seasoning
32 oz can of V8 or 16 oz can of tomato sauce + 3 cans water
16 oz of salsa
15 oz of black beans
1 C frozen corn
1 C frozen peas
2 whole chicken breasts, cooked and shredded

Combine all ingredients except corn, peas and chicken in a crock pot.

Cover and cook for 4-6 hours (I usually cook on high).

Add remaining veggies and chicken 1 hour before serving.

Garnish with fresh cilantro and/or chunks of avocado.

Serve with tortilla chips, if desired.
