Broccomole Dip

We eat lots of green things around here... asparagus, spinach, broccoli, green beans... you name em, we love um. One "green" recipe we enjoy on crackers is Broccomole, a yummy, creamy less-fat version of guacamole... (because there are no avocados).

Broccomole Dip  - Adapted from Taste of Home

2 cups chopped fresh broccoli, cooked and chilled
1/4 cup reduced-fat sour cream
1 to 2 tablespoons minced onion
1 tablespoon fat-free mayonnaise
2 to 3 tablespoons lemon juice
1/4 to 1/2 teaspoon chili powder
Raw vegetables or tortilla chips or crackers

Directions:

In a food processor, combine the first six ingredients; cover and process until smooth.

Refrigerate for several hours. Serve with vegetables, tortilla chips, homemade pita chips or crackers.

Yield: 6 servings.

This recipe is shared for a special St. Patrick's Day "Green" recipe swap at Ultimate Recipe Swap and for Diptacular, in honor of the start of football season. It's also linked to Monday Munchies and Whole Foods for the Holidays: Appetizers.
