We eat lots of green things around here... asparagus, spinach, broccoli, green beans... you name em, we love um. One "green" recipe we enjoy on crackers is Broccomole, a yummy, creamy less-fat version of guacamole... (because there are no avocados).
Broccomole Dip - Adapted from Taste of Home
2 cups chopped fresh broccoli, cooked and chilled
1/4 cup reduced-fat sour cream
1 to 2 tablespoons minced onion
1 tablespoon fat-free mayonnaise
2 to 3 tablespoons lemon juice
1/4 to 1/2 teaspoon chili powder
Raw vegetables or tortilla chips or crackers
Directions:
In a food processor, combine the first six ingredients; cover and process until smooth.Refrigerate for several hours. Serve with vegetables, tortilla chips, homemade pita chips or crackers.
Yield: 6 servings.
