There's nothing like a bowl of mom's noodle soup.... Normally, she makes her recipe on the stove top with homemade noodles! I decided this week to try it in the crockpot for a quick, delicious meal.
Mom's Homemade Soup ... Crockpot Style
Slow cook rice, handful
Barley, handful
Carrots, sliced (about 1 C)
Celery, sliced (about 1 C)
Onion, diced (about 1/4 C)
4 C chicken broth (I usually end up using 6-8 C -- because I make a bigger batch)
1 C cooked turkey
1 C dried whole wheat egg noodles
In a crockpot, combine broth, carrots, celery and onion. Cover and cook on high for 1-2 hours.
Add barley, rice and cooked turkey and reduce crockpot to low. Cook an additional 3-5 hours. About 1 hour before serving, toss in a heaping handful of egg noodles*. You should be able to toss everything in the crockpot in the morning (minus the noodles) and allow it to cook all day rather than adding ingredients in stages.
*Alternatively, you can cook the pasta on the stove top and toss in before serving.

Yummy! I love homemade soup. I am not feeling good this week and have had trouble finding things that I am able to eat so today I was glad to remember I had homemade turkey soup in the freezer. It is such a comforting meal.

Oh I love soup and this one is so close to the chicken soup I make in the crockpot, I'll have to definitely give it a try :)
ReplyDeleteDo you use regular brown or white rice? Should I cook it first or just put it in the crock pot and let it cook that way? Can this soup be frozen?
