My hubby was feeling creative and modified a macadamia-nut cookie recipe into a great nut-free oatmeal cookie! This cookie is light, soft, tasty and versatile!
Frog Prince's Excellent Cookies - Frog Prince
1 C butter (we've used a bit less and it's been fine)
1 C brown sugar
1 C white sugar
2 eggs (1 full egg + 1 egg white works)
2-4 tsp. vanilla (we almost always use 4... somewhat overflowing teaspoons!)
3 C flour
1 tsp. baking soda
1 1/2 C quick cook oats
1 tsp. baking powder
1/2 tsp. salt
2 C add-ins (we love dark chocolate chips, raisins, cherries, white chocolate chips...)
Preheat oven to 350. Lightly grease cookie sheets.
Cream together butter and sugars until smooth.
Add eggs and vanilla.
Sift together flour, baking powder, soda and salt. Stir dry ingredients into creamed mixture. Stir in oats and other add-ins.
Drop by tablespoons onto cookie sheets.
Bake 10-12 minutes until golden brown.
Cool on baking racks and enjoy!
