German Potato Salad


Being part German, I'll never say no to good German food. My grandma makes amazing German Potato Salad, and my mom's tried to recreate it a number of times. This recipes comes darn close! It's great because it's a summery dish that you can stick in the crockpot to keep warm :)

German Potato Salad - Mom

2 quarts boiled potatoes, peeled and cubed
2-4 strips bacon, cubed (or you can use bacon bits)
3/4 C sugar
2 T butter
2 T corn starch
1 C water
1 large onion, sliced (sweet is good)
1/2 C white vinegar
2 tsp. salt

Cook potatoes, peel and cube. This may be done ahead of time.


(look at my mom's nice seasoned hands... if this were me, I would NOT be holding and slicing the potatoes in my hand -- there's something about a knife in my hand, while slicing that I haven't yet mastered).


Cook bacon until crispy. When slightly cooled, you can break into crumbs if you did not initially chunk. This also may be prepared ahead of time.

Blend cornstarch into cold water. Add salt, sugar and vinegar. Boil sauce for a few minutes until clear, stirring constantly.

In a large pan, saute/warm potatoes in butter or olive oil. Add in onions. Pour sauce over the potatoes, and add in the bacon.

I like to combine the ingredients cold and place in a crockpot and heat on low until ready to serve.



This dish is a great accompaniment to springtime grilling :)

  1. Artichokes.....I steam them whole. You want them to have pointy leaves and be a little on the brown side. Once they are steamed I do a few things:
    -Cut lengthwise, cool in fridge, cover in EVOO and Grill
    -Warm some butter to dip and eat warm
    -Let cool and dip in mayonnaise or salad dressing

  10. I found this post from Vanderbilt Wife's friday recipe page. I *loved* my grandmother's german potato salad and although yours looks a little different, I definitely want to try it! Yum!!
