My mom is famous for this recipe! It was published in a Christmas Cookie Cookbook through Country Woman. These are delicious, and super easy to make.
Mint Chocolate Oreo Crunch - Mom
1 bag mint chocolate chips (or regular + mint extract)
2 1/2 bags (or 5.5 C chocolate chips)
1 pkg. Oreo cookies
4 C Rice Krispies
Melt chocolate chips.
Meanwhile, crumble cookies in a food processor until broken -- do not get them super fine, leave some larger pieces. Combine Oreo crumbs and Rice Krispies in a large bowl. Pour melted chocolate chips over the dry mixture and stir to coat well. Drop by teaspoonfulls onto wax paper to let chocolate set. Makes 124 cookies.
Then, let Dad clean out the bowl :)
Note: You can make a half batch easily, and use Andes Creme de Mint baking chips + 1 (12oz) bag of Hershey's Special Dark Baking Chips and 2 C Rice Krispies.
Yum! I LOVE the chocolate mint oreos that only come out at Christmas. I am definitely going to have to try these some time during the year when I need a little pick me up!

ReplyDeleteI made these last night and they are AMAZING! I immediately froze them for 2, ok, 3, reasons:
ReplyDelete1) to get them off the counter so I wouldn't eat them all right then
2) to save for next week to give as little gifts
3) they are awesome out of the freezer :o)
Thanks for the recipe, they are wonderful! I found Nestle had some special mint chocolate chips at the store the other day (half were mint, half were dark chocolate), but didn't have the Andes brand you mentioned, so I just bought 2 bags of those instead and it worked like a charm!
