Blackberry Pie

I've been feeling a little creative in the kitchen lately, so when I scored a great deal on blackberries, I whipped up a fun blackberry pie!



Blackberry Pie

3 C blackberries
1/4 C flour (you can use whole wheat)
1/3 C sugar
1 oatmeal pie crust
1/4 C granola
vanilla ice cream (optional, but highly recommended)


Wash berries and allow them to drain dry on a paper towel.



Meanwhile, mix up a quick oatmeal pie crust and form into an 8 or 9 inch pie plate.


Toss berries in a bowl with flour and sugar; stir gently to coat well.




Pour berries into the pie crust and sprinkle granola over the top.



Cover with tinfoil and place in the oven. Bake at 400 for 30 minutes, then uncover and bake an additional 20ish minutes until berries are warm and bubbly and until granola is lightly browned.


Serve warm, with vanilla ice cream (or fresh whipped cream)!


This pie is perfect for a summer night treat -- light and delicious.

  1. It has been such a blessing to come across your blog! I've been on a non-processed food kick lately, and your recipes provide me with loads of healthy ideas, without sacrificing on taste!
    I love that your recipes are lower in fat and sugar, and higher in fiber.

    I made this pie last night with a handful of blue berries thrown in, and it was amazing! Instead of using the granola on top, I used the crumble with oats, brown sugar, and cinnamon (from another recipe of yours). Thank you so much!!
