Crockpot Minestrone



This tasty dish is a perfect complement to a summer sandwich or warms you up great in the winter. It goes together quickly, and helps you get in those extra veggies (and fruits... because tomatoes are really a fruit...).

Veggie Minestrone - Modified from Fix-it and Forget-it
2 C chicken broth
1 - 15oz can tomato sauce + 1 can water
1 tsp. basil
1/8 tsp. salt
1/4 tsp. oregano
pepper, to taste
2 medium carrots, sliced
2 ribs celery, chopped
1 C fresh mushrooms, sliced
1 C beans (we used great white northern)
2 garlic cloves, minced
1 can diced tomatoes (undrained)
1 C rotini pasta (whole wheat)
Combine all ingredients, except pasta, in the crockpot.




Cook on low for 6-8 hours. Add pasta about 20 minutes before serving, and cook on high until pasta is done.

  1. I've been searching for a good minestrone recipe for years and have never found one that we love. I'll have to give this one a try to see what they think!
