Chocolate Oatmeal Cookies



The recipe grabbed my attention when it said, "brownie oatmeal cookie"... but, these aren't exactly brownie-like.  They are chocolaty, and delicious, so I introduce to you...


Chocolate Oatmeal Cookies - Modified from Super Healthy Kids

2/3 C whole wheat flour
1/2 C sugar
1 C oats (I used Old Fashioned)
1/3 C cocoa
1 tsp. baking powder
1 egg
1 tsp. vanilla
1/3 C corn syrup
1/8 C chocolate chips (dark is highly recommended)

Mix together the flour, sugar, oats, cocoa and baking powder.  Stir well to combine.



Then add in the egg, vanilla, syrup and stir to mix.  The dough will be tough to stir -- don't break a spatula like I did!!





Add in the chocolate chips.



Then, use two spoons (this is easier than your hands) to drop by the teaspoonful onto a greased cookie sheet.



Bake at 350 for about 10 minutes.  Then, allow cookies to cool for 2-4 minutes on the cookie sheet.  Remove the cookies to a cooking wrack to fully cool.





Makes about 2 dozen small/medium-sized cookies.
