Blueberry Muffin Coffee Cake



Blueberry Muffin Coffee Cake

Cake
1 C whole wheat flour
1 C white flour
1/2 C brown sugar, packed
2 1/2 tsp. baking powder
1 tsp. salt
1/4 C applesauce
3/4 C milk
1 egg
2 C blueberries

Topping
1/4 C brown sugar
1/2 tsp. cinnamon
1/2 C oats

Glaze
1/2 C powdered sugar
1/4 tsp. vanilla
1 1/2 tsp. hot water


Mix together dry ingredients.



In a medium bowl, mix together the egg, milk and applesauce.



Then, combine the dry and wet ingredients just until moist.





Gently fold in the blueberries.





Spread mix into a greased 9x13 baking dish.



In a small bowl, mix together the topping ingredients.



Sprinkle the topping over the cake.



Bake at 375 for 40ish minutes, until a toothpick inserted in the center comes out clean.



Then, mix together the glaze ingredients until smooth.



Drizzle over the warm cake, and enjoy!

  3. I need to add this to my list! We picked about 30 lbs of berries last week. Most I will freeze for winter, but will bake with some too.
